For Americans, especially, paella, a dish that originated in the Spanish city of Valencia, has come to be an iconic representation of Spanish cuisine, not only because it uses all of the ingredients for which Spain is most famous—rice, olives, and chorizo, to name just a few-- but also because it is made in a seemingly simple, rustic way, resulting in a satisfying, one-plate meal that is perfect for sharing with family and friends.
